1. Preheat oven to 400 2. Toss drained chickpeas with salt, cajun seasoning, smoked paprika and olive oil and bake for 20 minutes on a sheet pan until firm and slightly crispy 3. Make dressing by combing avocado, lime juice, yogurt, water, cilantro, maple syrup, salt, garlic powder, onion powder and Italian seasoning in a blender until smooth and creamy. 4. Add kale to a bowl and drizzle with 1 tsp olive oil and a pinch of salt. Massage for 2-3 minutes to relax the leaves and tenderize them. 5. Add bell pepper, cherry tomato, cucumber, chickpeas and green onions. Drizzle with the dressing and toss well. 6. Enjoy within 3 days.
